"As a teacher, I have the best job in the world - I help educate, mentor, and develop today's youth into tomorrow's leaders. Between classroom and kitchen instruction, we run a bistro that is generally open 3 days a week during the school year. Students plan weekly menus, develop recipes, and learn all aspects of the food service industry. Many of our students find gainful employment within our community's culinary industry, and many more graduate and continue studying in this field."
As the Culinary Arts teacher, my primary areas of focus are: • Development and evolution of program curriculum • Classroom & kitchen instruction • FOH (front of house) training – customer service & soft skills • Kitchen workflow management via brigade system • Menu & recipe planning & research • Menu & recipe development for targeted audiences • Nutritional education and planning • Restaurant operations, budget, and quality control • Sourcing product for quality & price • Kitchen and restaurant safety • ServSafe training for all student chefs • Proper knife training and technique • Baking & pastry skills • Source guest speakers and SME's (subject-matter experts) for classroom presentation • Student career development and higher education planning • Incorporation of community service and volunteer opportunities for student chefs • Catering services, both onsite and offsite • Develop & facilitate community adult education courses in culinary technique and meal preparation • Positive program exposure through community interaction (Local Farmers Market, Made-In-Michigan Festival, etc…) Certifications
